For us coffee has always been more than just a beverage - it’s a story, an experience, and a connection. For years, we partnered with external roasters to craft our signature espresso blend, but we often felt something was missing. There were times when compromises were made - not because the roaster wasn’t good, but because they weren’t us.
We had a vision for coffee that wasn’t about mass production, quick fixes, or cutting corners. We knew that to create the best coffee possible, we needed to take full control of the process—from sourcing to roasting, to the final pour. That’s when Interstellar Coffee Roasters was born.
Why We Started Roasting Our Own Coffee?
The decision to launch Interstellar Coffee Roasters wasn’t made overnight. It was driven by passion, frustration, and an unshakable commitment to quality.

📉 Stability in a Changing Market – Coffee prices have skyrocketed in recent years, with none specialty grade arabica beans reaching record highs of over $3.44 USD per pound in 2024 - an 80% increase from the previous year. (The Guardian) Instead of letting global fluctuations dictate our pricing, roasting in-house allows us to maintain stable prices while ensuring top-tier quality.

Our Signature Blend – LB+
At Latte Booth, we believe in the power of double-origin blends. Why? Because they offer the best of both worlds—the consistency and balance of a well-crafted blend with the unique character of specialty coffee.
Our LB+ blend is a 50/50 mix of Ethiopian and Brazilian beans, developed specifically for our espresso bars. The result? A thick, full-bodied espresso shot with notes of blueberry jam, caramelized sugar, and chocolate. It's smooth, complex, and incredibly satisfying—crafted to wow both coffee enthusiasts and everyday drinkers.

We don’t believe in roasting coffee just to follow trends. Instead, we focus on balance—bringing out the best characteristics of each bean while ensuring every cup is smooth, flavorful, and never overwhelming.

How We Source Our Coffee
We don’t just buy beans—we build relationships with the farmers who grow them.
Our coffee is directly sourced from producers we trust, ensuring transparency, fair pay, and quality from farm to cup.
🌱 Brazil – D’Barbosa Family, Minas Gerais – Rich, full-bodied, and chocolatey, these beans bring a strong foundation to our blends.
🌿 Ethiopia – Smallholder Farmers, West Arsi – Fruity, floral, and complex, these beans add bright acidity and layered complexity.
🎯 Guest Beans from Around the World – Every year, we attend the Specialty Coffee Association (SCA) Expo, where we meet incredible coffee producers from all over the world. This is where we source our limited-edition “guest” coffees—beans from places like Colombia, Guatemala, and El Salvador (Pacas Family), bringing fresh and exciting flavors to our lineup.

Bringing Specialty Coffee to Every Canadian Home – We don’t just want our coffee at events—we want it in the homes of coffee lovers across Canada. We’re working on expanding our retail offerings so more people can experience high-quality, approachable specialty coffee.
Buying Our Own Coffee Farms – The next step in our journey? Owning and operating coffee farms, allowing us to grow, process, and roast our own beans while supporting farming communities directly.
