Insurance & Safety $5 million in commercial liability. Drivers insured and safety-trained. Certificate available on request. Limited coverage or none. If something goes wrong at your event, the exposure lands on you.
Food Safety - Public Health Every barista holds a Canada-wide Food Handler Certificate. Drivers are food-safe certified. Our facility carries a DineSafe public health pass. Often uncertified, and many operate out of spaces no health inspector has ever seen.
Coffee Grinder Our very own custom-designed coffee grinder (yes, we built it). Engineered for speed and precision to maximize aroma extraction in every grind. Entry-level grinder. Slow and inconsistent, and it shows in the espresso.
Coffee Beans AAA-grade Arabica, roasted weekly in our own facility under our Interstellar Coffee label. Chocolate and caramel, no bitterness. Mid-grade beans cut with Robusta, roasted dark to hide it, then left on a shelf for months.
Menu A full seasonal menu built by our senior baristas. Raspberry Cortado. S’mores Latte. Torched Banana Snowball. Real ingredients, not powders. A short list of the basics.
Teas Loose-leaf, hand-selected, in silk pyramid sachets. Supermarket tea bags.
Flavours & Syrups Roj syrups from Guatemala, made in small batches with unrefined cane sugar. We chose them for the flavour and for how they buy from their farmers. Industrial syrup. High-fructose corn syrup and artificial flavour.
Baristas Ours, not an agency’s. Trained in-house on extraction, milk texturing and volume service, with ongoing training and food safety certification. Outsourced or minimally trained. It shows in the queue and in the cup.
Branding Options In-house graphic designer and large-format printer. Full bar wraps, printed latte art, custom cups and swag, and we can turn a change around the week of your event. A decal on the front, usually. Full wraps need a designer, a large-format printer and someone who can actually apply them, so most do not offer it at all.
WSIB Covered, reported quarterly. Usually none.
Compliance Secure payment processing, documented HR practices, a written company policy manual. Procurement teams ask for this. We have it ready. Nothing on file.
Capacity 40+ bars, a fleet of trucks and dedicated event managers. We hold large national contracts and run intimate gatherings and multi-day productions in the same week. One or two bars and a small team. Several events in one weekend becomes a problem, and it becomes your problem.
Service Speed We plan at 60 drinks an hour per bar, 120 with a double setup, and often run faster depending on the menu. We size the setup to your guest count so nobody queues. Slower, and usually much slower. A non-commercial machine needs recovery time between drinks, and an untrained barista adds more. The queue is what your guests remember.
Back-Up Equipment Machines fail. We carry a spare machine and grinder on long runs, and keep ready-to-go backups at the facility. No backup. If the machine dies, service is over.
Environmentally Friendly Home-compostable cups we import directly, recyclable materials throughout, and opt-in ceramic service where the venue suits it. Non-recyclable cups, no programme, no interest.

Ask any vendor for their certificate of insurance and their public health inspection pass. Most cannot produce either. Ours are available on request.
